This Greek Avgolemono soup is always a winner! Shredded chicken, rice, and a few simple vegetables are stirred into a silky smooth lemon-and-egg broth for a cozy balanced meal. The ingredients are fairly simple, although, I will say I created a small shortcut. Instead of cooking a whole chicken from scratch to create the shredded chicken and broth, I'm using a rotisserie chicken and boxed chicken broth. I'm also using pre-cooked white rice. Hello meal prep! Is this an authentic avgolemono soup? Technically, no, but it follows the same concept, with very similar results and flavor. Greek Lemony Chicken Avgolemono Soup with Tortellini


Print this recipe here: 🤍 Ingredients 5-6 boneless skinless chicken thighs 2-3 tablespoons olive oil 2 carrots, peeled and diced 4-5 garlic cloves, grated 8 cups chicken stock, or more 1/4 teaspoon ground turmeric salt, to taste freshly cracked pepper, to taste 1 pound tortellini pasta finely chopped fresh parsley For the Avgolemono: 6 egg yolks 1 teaspoon corn starch 1/4 cup freshly squeezed lemon juice Instructions Place the chicken in a saucepan with 4-6 cups of water or enough to cover the meat. Season with salt and bring to a boil. Reduce the heat to medium and cook for 2-25 minutes. Transfer the chicken to a plate to cool and reserve the broth. Strain the broth. Shred the chicken and set aside. Combine the avgolemono ingredients in a bowl and whisk them together. Add the olive oil and carrots to a soup pot and cook over medium heat until tender. About 8 minutes. Add the garlic and warm through until fragrant. Add the chicken stock, turmeric, shredded chicken and some fresly cracked black pepper. Bring to a boil and add the tortellini pasta. If the pasta is fresh, add the avgolemono sauce at the same time. If the tortellini is dried pasta and required 8-10 minutes of boiling, then add the avgolemono during the last 3 minutes of cooking. Simmer on medium heat until the pasta is fully cooked and the soup thickens slightly. Taste and add more salt if desired. Garnish with chopped parsley and serve. Kali Orexi! Greek Chicken Avgolemono Soup: Lemony Chicken & Orzo Soup


Κοτόσουπα αυγολέμονο Chicken Stock Video: 🤍 Serves 6-8: 14 cups homemade chicken stock About 4 cups (or less) shredded cooked chicken 8 egg yolks ½ - ¾ cup fresh lemon juice 3 tablespoons corn starch 3 tablespoons olive oil ¾ cup uncooked orzo pasta 1 teaspoon salt, or to taste ½ teaspoon dried dill   Bring chicken stock and shredded chicken to a boil. Add the orzo and 1 teaspoon of salt and boil for about 6 minutes. The orzo will be par cooked. Prepare the egg lemon mixture by combining the egg yolks, corn starch, lemon juice, and olive oil in a boil. Whisk them together until smooth and the cornstarch dissolves. Once the stock boils, add one cup of the hot liquid into the egg-lemon mixture to temper it. This will prevent the eggs from scrambling. Add 1-2 more cups of hot stock while whisking to incorporate. Add the tempered egg lemon mixture back into the pot and cook over medium heat about 4 minutes until the soup thickens. Continue to mix it. Add the dried dill and stir. Serve immediately. Enjoy! Whisk the eggs in a separate bowl. Slowly add one ladle full of hot broth to temper the eggs, whisking constantly. When the eggs are tempered, stir them back into the soup mixture. Add the lemon juice, zest and spinach and stir until spinach just wilts. Turn off the heat and stir in the dill. Season with salt and pepper to taste and serve immediately, drizzled with chili oil. 4. Cook's Tip: The soup thickens as it sits because of the rice. Add a little more broth or water to thin it out. 5. I love soup for many reasons, but especially because it’s very filling and a healthy, economical choice for our large family. Many nights each week there is a big stockpot full of soup sitting on the stove as hungry teenagers begin to find their way home. 🤍

Lemon Chicken Orzo Soup | Easy & Delicious Comfort Food


Lemon Chicken Orzo Soup is the ultimate comfort food! It tastes fresh and hearty at the same time and gives your belly kisses from the inside! Printable recipe 🖨: 🤍 Ingredients 🥬 1 onion 2 cloves garlic 2 carrots 3 stalks celery 2 small chicken breasts (7oz each) 8 cups flavorful chicken broth 2 sprigs rosemary 3-4 sprigs thyme 3-4 sage leaves 1.5 cups orzo 1/2 cup frozen peas sea salt pepper 1 juice of whole lemon parsley Instructions ✏️ 1. Peel and finely chop onion and garlic. 2. Peel and dice carrots and wash and dice celery. 3. Preheat a large pot over medium heat, once hot add a splash of olive oil and then sauté onions and garlic until translucent. Add diced vegetables and stir-fry until bright (about 5 minutes). 4. Add chicken breasts to pot and then pour broth over everything. Add herbs either loosely or in an herb infuser. 5. Bring everything to a boil and once boiling, put on the lid, reduce the heat to low and cook for 10-12 minutes or until the chicken breasts are cooked through to 165F internal temperature. 6. Remove chicken breasts from the soup and place on a cutting board. 7. Add orzo to the broth and cook for about 10 minutes or until al dente. 8. In the meantime, take two forks and shred the chicken breasts. Once the pasta is cooked, add the chicken back into the soup to reheat for about 1 minute. 9. Add frozen peas (they will defrost immediately in the hot broth). 10. Remove the herb infuser, add lemon juice, and taste test to see if it needs more seasoning with sea salt and pepper (this will depend on how flavorful your broth was). 11. Serve in a bowl, sprinkle with freshly chopped parsley, and enjoy!

Avgolemono, a Greek style soup that’s made with chicken stock, rice, eggs and lemon juice. So simple, so delicious. The soup is thickened with the eggs and the rice giving a rich creamy finish without any cream. The rice has to be cooked until it starts to break apart. The eggs are mixed with a little of the hot stock or soup first to emulsify them, preventing the eggs from scrambling and having a curdle finish. Only high-quality chicken stock will do here. 3/4 cup orzo pasta or rice (125 ml) Sea salt and and freshly cracked black pepper 2 eggs Juice of 1 lemon In a medium pot, bring broth to a boil. Add the orzo pasta and simmer, uncovered, until pasta is cooked, about 8-9 minutes. In a medium bowl, whisk together eggs and lemon juice until frothy. Take a ladleful of the hot broth from pot into a measuring cup and add slowly to the egg mixture while whisking vigorously. Pour this mixture back into hot soup. Remove immediately from heat and do not boil. Adjust seasoning and serve immediately. How to Make Avgolemono Greek Soup (Kotosoupa Avgolemono)


The Best Greek Chicken Soup (Kotosoupa Avgolemono) 🤍 Ingredients 1x whole chicken 2x teaspoons salt 1x chicken stock cube (optional) 4x eggs 250ml lemon juice 1x cup washed rice (medium grain) Black pepper to finish Process 1. Cut up a whole chicken into pieces and put into a large pot with 5 litres of water 2. Add in 2 teaspoons of salt and 1 chicken stock cube 3. Bring to boil and leave it cooking for 1 hour (until the chicken is cooked) 4. Separate the egg yokes from the whites 5. Beat the egg whites until fluffy and creamy. Once the egg whites are fluffy, add in the egg yolks 7. Once chicken is boiled (after the 1 hour) remove the chicken from the water and set aside 8. Pour the chicken stock water through a sieve to remove the excess solids from the water and return the liquid back to a clean pot 9. Remove one large cup of water from the pot and set aside to cool (this will be used to add into the egg and lemon mix afterwards) 10. Place the rest of the water in the pot back onto boil and add in your rice 11. Debone your cooked chicken and peel the chicken into shreds whilst your rice cooks 12. Once your rice is done, add your lemon into your frothy egg mixture and slowly add in the cup of warm chicken stock water and mix together (this process warms up the egg mixture so when you add it into the water with the rice, it won’t curdle) 13. Slowly pour the egg/lemon mixture to your large pot with rice whilst continuously stirring 14. Once all mixed through, it’s all ready! Instant Pot Greek Lemony Chicken & Orzo Soup


My Instant Pot (affiliate Amazon link): 🤍 Print this recipe here:🤍 Ingredients The Stock: 1 whole chicken or 6 bone-in skinless thighs 12 cups (4 liters) water 1 onion, quartered 2 carrots, peeled 2 celery stalks 6 garlic cloves 2 teaspoons salt 1/2 teaspoon turmeric powder freshly ground black pepper, to taste The Soup: 1 carrot peeled and diced 1 cup uncooked orzo pasta or Arborio rice 8 egg yolks 1/4-1/2 cup fresh lemon juice 1 heaping teaspoon cornstarch 1/2 teaspoon dried dill or 2 tablespoons finely chopped fresh parsley Notes Add all of the stock ingredients to the Instant Pot. Stir and cover with the lid. Set to high pressure for 17 minutes and set the pressure valve to the "seal" position. Keep in mind that it takes about 10 minutes for the Intsant Pot to come to pressure. Allow 15 minutes to slow release the pressure and then move the valve to "vent" to release the remaining steam. Carefully remove the chicken and veggies. Shred the chicken and set aside. Add the orzo pasta or the rice to the stock along with the diced carrot. Cover with the lid and set to high pressure for 2 minutes. Allow 10 minutes to slow release the pressure then move the valve to vent. In a bowl, add the egg yolks, cornstarch, lemon juice and dill. Whisk them all together until smooth. Add some hot broth to the egg mixture to temper it. Pour the egg-lemon mixture into the Instant Pot and add the shredded chicken. Set the Instant Pot to the saute feature until the soup thickens slightly. About 3-5 minutes. Taste and adjust the seasoning if needed. Serve. Kali Orexi!
